Solar-Infused Herb Oil
  1. Wash and thoroughly dry herbs (any moisture can cause spoilage).
  2. Place herbs, garlic, peppercorns, and lemon zest in the glass jar.
  3. Pour olive oil over the herbs, making sure they are completely submerged.
  4. Seal the jar tightly.
  5. Place the jar in a sunny spot outdoors on a warm day (at least 85°F/29°C).
  6. Allow to infuse for 4-8 hours, depending on the intensity of the sun and desired flavor.
  7. Strain the oil through a fine-mesh sieve or cheesecloth into a clean bottle.
  8. Label with the date and herb type. Store in a cool, dark place for up to 1 month.
