- Wash and thoroughly dry herbs (any moisture can cause spoilage).
- Place herbs, garlic, peppercorns, and lemon zest in the glass jar.
- Pour olive oil over the herbs, making sure they are completely submerged.
- Seal the jar tightly.
- Place the jar in a sunny spot outdoors on a warm day (at least 85°F/29°C).
- Allow to infuse for 4-8 hours, depending on the intensity of the sun and desired flavor.
- Strain the oil through a fine-mesh sieve or cheesecloth into a clean bottle.
- Label with the date and herb type. Store in a cool, dark place for up to 1 month.
