- Wash and scrub lemons thoroughly. Dry completely.
- Cut 8 lemons into quarters, but not all the way through, leaving them attached at the base.
- Pack each lemon with salt, opening them up like a flower.
- Place a tablespoon of salt at the bottom of the jar.
- Pack the lemons tightly into the jar, pressing down to release some juice.
- Add spices between the layers of lemons if using.
- Squeeze the juice from the remaining 2 lemons and pour over the salted lemons.
- Add more fresh lemon juice if needed to completely cover the lemons.
- Seal the jar and store at room temperature for 4 weeks, turning the jar upside down every few days.
- Once preserved, store in the refrigerator for up to 6 months.
