Preserved Seasonal Lemons
  1. Wash and scrub lemons thoroughly. Dry completely.
  2. Cut 8 lemons into quarters, but not all the way through, leaving them attached at the base.
  3. Pack each lemon with salt, opening them up like a flower.
  4. Place a tablespoon of salt at the bottom of the jar.
  5. Pack the lemons tightly into the jar, pressing down to release some juice.
  6. Add spices between the layers of lemons if using.
  7. Squeeze the juice from the remaining 2 lemons and pour over the salted lemons.
  8. Add more fresh lemon juice if needed to completely cover the lemons.
  9. Seal the jar and store at room temperature for 4 weeks, turning the jar upside down every few days.
  10. Once preserved, store in the refrigerator for up to 6 months.
