- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a large bowl, mix mashed bananas with melted coconut oil and honey/maple syrup.
- Beat in the egg and vanilla.
- Sprinkle baking soda and salt over the mixture and stir in.
- Add flour and stir until just combined.
- Fold in your chosen upcycled add-ins and optional nuts/seeds.
- Pour batter into prepared pan and bake for 55-60 minutes, until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
