Upcycled Banana Bread
  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, mix mashed bananas with melted coconut oil and honey/maple syrup.
  3. Beat in the egg and vanilla.
  4. Sprinkle baking soda and salt over the mixture and stir in.
  5. Add flour and stir until just combined.
  6. Fold in your chosen upcycled add-ins and optional nuts/seeds.
  7. Pour batter into prepared pan and bake for 55-60 minutes, until a toothpick inserted comes out clean.
  8. Cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
