Zero-Waste Vegetable Soup
  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Add garlic and cook for another minute.
  4. Add vegetable scraps, diced tomatoes, vegetable broth, bay leaf, and thyme.
  5. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  6. Add kale or spinach and cook until wilted, about 2 minutes.
  7. Remove bay leaf. Season with salt, pepper, and lemon juice.
  8. Serve hot, optionally with crusty bread.
